The Holiday Corporate Event
This festive Holiday Party took place in a Territorial style home in the hills above Old Pecos Trail. Guests were greeted with a glass of wine and lamb empanadas and smoked mushroom, raja and cheese tamales.
The buffet menu included a red chile smoked beef tenderloin in a rich beef demi-glace, cedar plank salmon platter, and duck breast in Ibarra mole. The arugula and pear salad with apple shallot dressing was followed by a creamy lobster mash and mushroom polenta.
Dessert selections included Belgian chocolate-dipped dried fruit, red chile chocolate caramel ganache bars and raspberry cheesecake cups.
