The Rancho de las Golondrinas Wedding
The Rancho de las Golondrinas Wedding took place on a sunny Fall day with the ceremony in a meadow, shaded by golden leafed cottonwood trees.
Dispensers with agua fresca were placed next to an old wagon where guests could easily serve themselves in eco-friendly cups once the exchanging of the vows were complete.
After the ceremony, wedding guests climbed a small hill to the enclosed courtyard where a table full of antipasti greeted them. Platters of artisanal cured meats and cheeses, house-marinated olives, house-made mustards, jams, pickled vegetables, crostini and tall grissini bread sticks sated guests while they sipped on glasses of wine, beer, Aqua Pana Spring Water and Pellegrino.
Guests retired to the enclosed pavilion for dinner as the sun was just starting to set. A salad of mixed greens, roasted red beets, pickled golden beets, fresh carrot curls, heirloom tomatoes, parmesan tuiles and lime cilantro vinaigrette dressing was preset at each guest’s place. Our professional staff provided wine service to the party.
Chile smoked beef tenderloin in a rich beef demi-glace started the opulent dinner buffet followed by chimichurri sauce, garlic mashed Yukon potatoes and smoked and roasted Fall harvest vegetable platters filled with Santa Fe Farmer’s Market finds. Vegetarian guests were offered a white bean, wild rice and mushroom stuffed poblano chile with romesco sauce. Simply delicious!
DJ Waefunky spun tunes immediately after dinner while the couple sliced into house-made tres leches cake which was moist and not too sweet with fresh berries and buttercream icing. Guests also enjoyed warm pumpkin creme brûlée with hot brewed coffee.
At the end of the night, attendees were ushered to buses with warm beverages to go in hand, and unforgettable memories of this beautiful Santa Fe wedding in their hearts.
